Aardappelsalade met koriander avocado dressing

Heerlijke simpele salade met de dressing in een hoofdrol: van gepureerde avocado met citroen en koriander (of peterselie). Meng het met bladgroenten naar keuze. Ik had waterkers.

Ingredients

  • 600 gr potato in blokjes (4 cups
  • 1 avocado
  • 1 handje sun-dried tomatoes
  • 75 gr watercress of andere groene bladgroente (2½ cup
  • 1 lemon
  • 1 handje black olives zoals Kalamata
  • 1 bosje cilantro fresh (Dutch: verse koriander
  • 1 handje capers
  • 2 nufjes sea salt naar smaak, maar voor MM zo weinig mogelijk, Celtic
  • 1 el water

Instructions

  1. Stoom de aardappelen. In blokjes, in hun schil. Laat ze afkoelen.
  2. Meng de avocado met het citroensap, koriander, een eetlepel water en twee snufjes zout.
  3. Meng het avocadomengsel met de aardappelen.
  4. Meng de waterkers of andere bladgroenten erdoor.
  5. Leg ze op de borden en garneer met de zongedroogde tomaten, olijven en kappertjes.
