Description
This version of Agua de Horchata begins by soaking long-grain white rice and broken cinnamon sticks in water for several hours to extract flavor and soften the grains. The soaked mixture is then blended, including the cinnamon sticks, to break down solids before straining to remove residue. Sweetened condensed milk and vanilla extract are mixed in to add creaminess and sweetness, while additional water adjusts the consistency.
The flavor is dominated by fragrant cinnamon and vanilla balanced with rice's mild earthiness and the milky sweetness of the condensed milk. The texture is smooth, slightly thickened from the condensed milk, with aromatic notes throughout.
Typically served chilled or over ice, this horchata drink works well as a refreshing beverage particularly in warm weather or with spicy foods. The ingredients and soaking time allow it to develop a delicate but full-bodied taste.
For faster preparation, hot water can be used to reduce soak time, or rolled oats may substitute for rice, providing a similar creamy texture with slight variation in flavor. The recipe yields six 1-cup servings and keeps refrigerated up to four days.

Instructions
- In a medium bowl, add water, rice, and cinnamon sticks. Soak for 2 hours. Transfer to a blender and process until smooth (do not remove the cinnamon sticks).
- Pour through a fine-mesh strainer. Stir in sweetened condensed milk, vanilla and the remaining 2 cups water. Serve over ice or chill until serving time.
Notes
- Using 3 cups boiling water for soaking can reduce soak time to 1 hour instead of 2.
- Rolled oats can substitute rice for a different but similar creamy texture.
- Store prepared horchata refrigerated and covered for up to 4 days.
