Aioli - Homemade Garlic Mayonnaise Recipe

This aioli recipe combines smashed garlic, egg yolk, lemon juice, and a slow stream of olive oil to create a creamy, garlicky mayonnaise-style sauce. It has a smooth, thick texture ideal for spreading or dipping. The oil must be added slowly to emulsify properly and yield the characteristic richness of aioli. This homemade condiment adds fresh garlic flavor to dishes like French fries, crab cakes, broiled fish, or crusty French bread.

Description

Aioli - Homemade Garlic Mayonnaise Recipe uses simple ingredients to make a creamy sauce centered on garlic flavor. The garlic is smashed to release its aroma and mixed with egg yolk and fresh lemon juice before olive oil is whisked in gradually, building a thick and emulsified mayonnaise-like texture. The slow addition of oil is crucial to prevent breaking the mixture. This technique results in a sauce that's fresh with a mild sharpness from the lemon and warming heat from the garlic.

The final aioli has a smooth and silky consistency, rich and well-balanced between oil, acid, and garlic pungency. It can be spooned on and paired with fried foods like fries or seafood cakes, or spread on bread for an added layer of flavor.

When making the sauce, keeping all ingredients at room temperature helps the emulsion to form correctly. The texture is thickened but still spoonable, adding creaminess and garlicky tang to dishes.
