Description
This recipe uses riced cauliflower and broccoli as vegetable bases to mimic rice, sautéed with garlic and diced onions in olive oil until translucent. The vegetables are seasoned with Italian seasoning and salt. Meanwhile, the cassava-based orzo pasta cooks in boiling chicken broth separately. Ingredients
- 4 cups chicken broth Homemade is best
- extra virgin olive oil
- 4 garlic chopped, cloves
- 1 onion diced
- 1 package cauliflower rice
- 1 package broccoli riced
- 1 teaspoon Italian seasoning
- 1 box cassava pasta Jovial Foods brand, orzo shape
Instructions
- Bring the broth to a boil in a large saucepan with a tablespoon of extra virgin olive oil.
- Add a few tablespoons of oil to large frying pan over high heat. Add the garlic and onions then sauté until translucent, about 3-5 minutes.
- Add the cauliflower and broccoli rice to the pan. Season with Italian seasonings and 1/2 teaspoon salt. Stir to combine and continue to stir occasionally to keep from sticking to the pan.
- Once the broth is boiling add the pasta. Take care to stir occasionally so that the pasta doesn’t stick to the pan. Once the pasta has finished cooking, add the pasta and pasta water to the pan of rice. The pasta water should have cooked down at this point and should be mostly pasta.
- Stir to combine. Season to taste and then serve.
Notes
- Add 1/2 teaspoon salt to homemade chicken broth if unsalted to improve flavor.
- Allow the vegetable rice mixture to sit occasionally during cooking to let moisture evaporate, achieving a rice-like rather than mashed texture.
