Ingredients
- 2 medium zucchini cut into mini half-moon crescents or bite sized pieces (about ¾ inch thick)
- 1 teaspoon olive oil or olive oil spray
- ¾ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ - ¾ teaspoon salt
- ½ teaspoon black pepper
- 3 - 4 tablespoon Parmesan Cheese fresh is best, grated
- lemon juice for serving, fresh, a squeeze, optional
Instructions
- Preheat your air fryer to 390°F.
- In a large mixing bowl, combine zucchini, olive oil or spray, garlic powder, onion powder, salt, pepper, and parmesan cheese. Mix until zucchini is fully coated.
- IMPORTANT: Carefully line the bottom of your air fryer with parchment paper, so the cheese doesn’t fall off into the basket or get stuck on the grate.
- Add seasoned zucchini and air fry for 8 - 12 minutes, shaking zucchini every 3 minutes or so. The zucchini should be tender and slightly crisp; the cheese should be golden.
- Enjoy warm, and serve with a squeeze of lemon juice if desired!

- Use fresh grated Parmesan for best melting and flavor; pre-grated cheese has coatings that affect texture.
