Acorn squash with a hint of brown sugar, butter, and cinnamon, air fried until tender & golden.

Ingredients
- 2 small or medium acorn squash
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt or to taste
- 1 tablespoon butter melted
- 1 tablespoon brown sugar
- ⅛ teaspoon cinnamon
Instructions
- Preheat the air fryer to 370°F.
- Cut the squash in half and scrape out the seeds with a spoon.
- Coat the squash with olive oil and sprinkle with salt.
- Place in the air fryer basket, cut side up, and cook for 15 minutes.
- While the squash is cooking, combine melted butter, brown sugar, and cinnamon.
- Open the air fryer and brush with the brown sugar mixture. Cook an additional 10-15 minutes or until the flesh is tender and slightly golden.
Notes
- Leftover squash can be kept in an airtight container in the fridge for up to 4 days. Reheat in the air fryer or under the broiler.
- Freeze cooled squash pieces in a zippered bag for up to 4 weeks. Use in soups, stews, or stir-fries.
