  • 2 Artichoke
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 lemon

Garlic Aioli Dipping Sauce

  • 1/2 cup mayonnaise
  • 2 cloves garlic minced
  • 1/2 teaspoon black pepper
  • 1 teaspoon dill
  • 1 teaspoon paprika
  • 2 teaspoons lemon juice

Instructions

  1. Prepare your artichoke. Remove the stem and cut off the top half inch. Use a large knife for this step. Then cut the tip off each of the outer leaves. Kitchen shears work well for this step.
  2. Wash the vegetable by running it under cold water. Gently pull apart the leaves to let the water in. Pat it dry. 
  3. Cut each artichoke in half. Then remove the tiny fibers, called the choke, at the center of the heart. Use a spoon or knife to dig these out.
  4. Artichokes will start to brown once you cut them open. Squeeze lemon juice over the inside to stop the browning.
  5. Brush olive oil over the inside and outside of each half. Season the inside with salt, pepper, and garlic powder. 
  6. Place hearts in the air fryer basket and cook at 350 degrees F for 8 minutes. Flip and cook for 4 more minutes. 
  7. While cooking, mix all the garlic aioli ingredients together in a medium bowl.
  8. Remove hearts from the air fryer basket and let them cool for a few minutes before serving with the sauce.

Notes

  • Serve artichokes warm with lemon wedges for added brightness.
  • Peel the leaves individually and dip into the garlic aioli or a simpler melted butter or mayonnaise if preferred.
  • Removing the choke carefully is essential to make the hearts enjoyable and tender.
