  • 1 pork tenderloin about 1 1/2 lbs
  • 6 Bacon center cut strips

Rub:

  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon canola oil
  • cooking string

Instructions

  1. Season pork with salt and pepper.
  2. Carefully wrap the tenderloin in the bacon
  3. Tie the roast at 2- inch intervals with kitchen string each about 12-inches long.
  4. Mix the rub ingredients. And press onto the tenderloin.
  5. Carefully cut the tenderloin in half to fit in the air fryer basket.
  6. Air fry at 400 F for 20 minutes turning halfway, until an instant-read thermometer inserted into the center of the meat reads 145-150 F.
  7. Let the pork rest about 5 minutes before slicing.
  8. Slice into 12 slices.
  9. Serve with mashed potatoes. Garnish with chopped parsley.
