Air Fryer Bacon Wrapped Scallops

Air Fryer Bacon Wrapped Scallops combine moist sea scallops seasoned with olive oil and Old Bay, wrapped in partially cooked bacon brushed with maple syrup, then air fried until the bacon crisps but the scallops stay tender. This method balances smoky, sweet, and savory flavors while preserving the scallop's delicate texture. The air fryer keeps the bacon crisp without overcooking the scallops for a simple yet flavorful appetizer or snack.

Description

This recipe calls for large sea scallops dried and seasoned with olive oil, Old Bay seasoning, salt, and pepper. Partially cooking the bacon first in the air fryer renders some fat without crisping it, allowing it to cook thoroughly after wrapping the scallops. Cutting the bacon in half accommodates the size of the scallops. Brushing the wrapped scallops with maple syrup adds a mild sweetness that complements the smoky bacon and seasoned scallops. Cooking them in the air fryer at 350°F for 11-13 minutes cooks the scallops fully and crisps the bacon without overcooking.

Serving these scallops as finger food or an appetizer highlights the contrast between tender scallop and crisp bacon with a touch of sweet glaze. Choosing scallops that are evenly sized ensures even cooking.

For preparation, scallops can be wrapped ahead of time and refrigerated for up to 24 hours before air frying. If using frozen scallops, fully thaw them before cooking. Adjust the bacon quantity depending on scallop size, using a full slice for large scallops or half a slice for smaller ones.

Ingredients

Servings
  • 8 lices Bacon or as needed, *see note
  • 8 large sea scallops not bay scallops
  • 1 teaspoon olive oil
  • ½ teaspoon Old Bay seasoning
  • salt
  • black pepper
  • 2 tablespoons maple syrup

Instructions

  1. Place bacon in the air fryer at 350°F for 3-4 minutes or until just slightly cooked and some of the fat has rendered out. Bacon should not be crisp.
  2. Remove bacon from the air fryer and wipe out any grease in the bottom.
  3. Dab scallops dry with paper towels and season with olive oil, old bay seasoning and salt & pepper to taste.
  4. Cut bacon in half (unless your scallops are really large) and wrap each half around one of the scallops. Seal with a toothpick or thread onto short skewers.
  5. Brush scallops with maple syrup.
  6. Place scallops into an air fryer at 350°F for 11-13 minutes. Cook just until bacon is crisp and scallop is cooked. Do not overcook.

Notes

  • Use 1 slice bacon per large scallop or 1/2 slice for smaller scallops.
  • Choose scallops that are fresh, firm, and evenly sized; fully thaw frozen scallops before use.
  • Partially cook the bacon until some fat renders for best results.
  • Wrap scallops and refrigerate up to 24 hours before air frying.
