Ingredients

  • 1-2 medium ripe bananas 1 cup
  • 3 tablespoons vegetable oil
  • ¼ cup milk or buttermilk
  • 1 teaspoon vanilla
  • 1 egg
  • 1 ⅛ cup flour
  • cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon

Mix-ins (optional)

  • ½ cup walnuts macadamia nuts, chocolate chips, or dried fruit

Instructions

  1. Spray two 3 x 5-inch mini loaf pans with nonstick spray. Set the air fryer at 320 degrees F and let it preheat for 3 minutes.
  2. Peel the brown bananas and place them in a large mixing bowl. Mash bananas with a fork until they are smooth.
  3. Mix the oil, milk, vanilla, and egg. Stir until well combined.
  4. Combine the flour, brown sugar, baking powder, baking soda, salt, and cinnamon in a separate bowl. Stir to mix.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. If you are adding nuts or chocolate chips, stir them in now. You can also sprinkle them on top.
  7. Divide the batter between the loaf pans.
  8. Cook in the air fryer at 320 degrees F for 15-20 minutes. Air fryers vary, so stick a toothpick in the center to check for doneness. Put a piece of foil over the top if it is browning too fast and is not done in the middle.
  9. When it is done, let it cool in the pan for 10 minutes, then dump it out and put it on a wire rack to finish cooling.

  • Look for overripe bananas with brown spots on the peel, as they'll be sweeter and easier to mash.
  • Add 1/2 cup of nuts, dried fruit, or chocolate chips for extra flavor.
