Air Fryer Breakfast Potatoes

Air Fryer Breakfast Potatoes are cubed russet or red potatoes tossed with olive oil and a blend of herbs and spices including herbes de Provence, salt, pepper, garlic powder, and onion powder. The air frying method yields golden, crispy potatoes with tender interiors. Tossing during cooking ensures even browning, making these potatoes a flavorful and convenient addition to any breakfast plate.

Description

This recipe starts by cutting potatoes into uniform half-inch chunks to promote even cooking. Potatoes are coated in olive oil and seasoned with herbes de Provence, garlic and onion powder, salt, and pepper. Preheating the air fryer (if required) ensures consistent heat distribution. Cooking at 400°F for about 15 minutes with intermittent tossing allows the potatoes to develop a crispy exterior while maintaining a soft center.

The resulting potatoes have a browned, textured crust with aromatic herb seasoning, suitable as a side for eggs, bacon, or other breakfast foods. Serving immediately after cooking preserves their crispness.

For those without air fryers, oven roasting with similar seasonings provides a comparable texture. Leftovers keep well refrigerated in airtight containers for up to three days and can be reheated carefully to restore crispness.

Ingredients

Servings
  • 1 russet potato cut into ½ inch chunks (about 2 cups, or 2-3 medium red or gold potatoes
  • ½ Tablespoon olive oil or avocado oil
  • ½ teaspoon herbes de provence or dried rosemary
  • ¼ teaspoon salt plus more to taste, fine sea salt
  • ¼ teaspoon black pepper ground
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  1. Wash and cut potatoes into even chunks, about ½ inch. Try to make all the potatoes about the same size so that they cook evenly. You’ll want about 2 cups of potatoes.
  2. Add potatoes to a large mixing bowl with oil and seasonings. Toss until potatoes are fully coated.
  3. Preheat air fryer if required. Add potatoes to the air fryer in a single layer and cook on 400°F for about 15 minutes, tossing every 5 minutes. Watch them closely in the last 2-3 minutes to make sure they don’t burn.
  4. Serve potatoes immediately.

Notes

  • Ensure potato chunks are uniform in size for even cooking.
  • Toss the potatoes every 5 minutes during air frying to promote even browning.
  • Oven roasting is an effective alternative if an air fryer is unavailable.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Serve immediately for best texture and flavor.
