Air Fryer Buffalo Chicken

Air Fryer Buffalo Chicken features boneless skinless chicken breasts coated in spicy buffalo sauce, then cooked in an air fryer for a crispy exterior and juicy interior. The recipe includes a homemade buffalo sauce option made from hot sauce, butter, and paprika. Marinating the chicken briefly enhances flavor, and finishing the cooked chicken with additional sauce keeps it moist and well-coated. This method delivers well-seasoned chicken suitable for quick meals or meal prep with manageable cleanup.

Description

This recipe begins with patting the chicken breasts dry and marinating them in buffalo sauce seasoned with salt and pepper. After preheating the air fryer and lightly greasing the basket, the chicken breasts are arranged in a single layer and cooked at 360°F. The breasts are air-fried first on one side then flipped to ensure even cooking, resulting in a tender center with a slightly crisped surface. Extra buffalo sauce is applied near the end of cooking to enhance moisture and flavor, and the chicken is rested after cooking to allow juices to redistribute.

The homemade buffalo sauce combines hot sauce, melted butter, and paprika, providing a classic spicy and buttery flavor. This chicken can be sliced for sandwiches, salads, or enjoyed as a main dish with sides. The recipe also suggests preparing chicken tenders or using boneless skinless thighs, adjusting cook times accordingly.

Buffalo chicken holds well for up to five days refrigerated, making it ideal for meal prepping. It can be frozen for up to two months and reheated in the air fryer or microwave. Resting the chicken after cooking is emphasized to maintain juiciness.

Ingredients

Servings
  • 3 medium chicken breast skinless and boneless
  • cup buffalo sauce e.g., Primal Kitchen, plus more for serving, 3 tablespoons
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • avocado oil or olive oil, cooking spray

Homemade Buffalo Sauce:

  • ½ cup hot sauce Frank's Red Hot brand
  • 1 tablespoon butter melted, or ghee
  • ½ teaspoon paprika

Instructions

  1. Preheat your air fryer to 360°F and lightly grease the basket with olive oil or avocado spray.
  2. Pat the chicken breasts dry with a paper towel and place them in a shallow bowl.
  3. Pour ⅓ cup of buffalo sauce over the chicken and season with salt and pepper. Use kitchen tongs to flip the chicken breasts to ensure they are completely coated. Let marinate for 5 to 10 minutes.
  4. Once the air fryer is heated, evenly space out the chicken breasts into the basket, placing them breast side down (the smooth side).
  5. Air fry for 10 minutes, then flip with kitchen tongs and cook for another 3 - 5 minutes.
  6. Remove the chicken breasts from the air fryer and generously top them with the remaining 3 tablespoon or more of buffalo sauce. Return to the air fryer and cook for another 2 – 3 minutes or until the chicken reaches an internal temperature of 165°F.
  7. Allow the chicken breasts to rest for 5 minutes before cutting and serving. Enjoy!

Notes

  • Use store-bought or homemade buffalo sauce to taste; include the homemade option with hot sauce, butter, and paprika.
  • Cut chicken breasts into strips for buffalo chicken tenders; adjust cook time to 10-12 minutes total.
  • Boneless, skinless chicken thighs can be used as an alternative; air fry for 10 minutes, flip, then cook 4-5 more minutes until 165°F internal temperature.
  • Always allow the chicken to rest for 5 minutes after cooking to preserve juiciness.
  • Store cooked buffalo chicken in an airtight container in the refrigerator up to 5 days; freeze up to 2 months and thaw before reheating.
  • Reheat frozen or refrigerated chicken in the air fryer for 5-8 minutes or microwave wrapped in a damp paper towel for 20-30 seconds.
