This Air Fryer Butternut Squash makes the perfect easy Keto side dish for busy weeknights. Tender cubes of fresh butternut squash are seasoned with a blend of sweet and savory spices, giving it lots of flavor!

Ingredients
- 2 pounds butternut squash cubed
- 1 ½ tablespoons olive oil
- 1 teaspoon garlic salt
- 1 teaspoon fresh thyme
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground black pepper
Instructions
- Preheat air fryer on 400°F for 5 minutes.
- Add your cubed butternut squash to a mixing bowl, then drizzle the olive oil over the top, then sprinkle the garlic salt, ground black pepper, fresh thyme and ground cinnamon.
- Toss to combine, making sure every piece is well coated.
- Pour an even layer in the basket of your air fryer, making sure there no pieces are overlapping. You might have to do this in 2 batches, depending on the size of your air fryer.
- Air fry for 15-17 minutes, shaking the basket halfway through, then serve.
Notes
- I used a 2 pound butternut squash whole and raw. Nutritional data took into account the discarded peel, seeds and pulp. If you decide to use store bought pre-cut butternut squash, you will need closer to 1 ½ pounds.
