Air Fryer Butternut Squash Cubes
Description
Air Fryer Butternut Squash Cubes uses peeled butternut squash cut into ½ to 1-inch pieces coated in a blend of neutral cooking oil, pure maple syrup, crushed garlic, fresh herbs like thyme, rosemary or sage, along with salt and black pepper. The cubes are spread in a single layer in a preheated 380°F air fryer to roast for around 18-20 minutes, shaken halfway for even cooking.
This method produces squash with a tender interior and lightly caramelized edges, accented by the sweet maple syrup and savory garlic-herb coating. The addition of fresh herbs and garlic brings an aromatic dimension to the naturally sweet and dense squash flesh.
Serve these cubes as a side dish alongside roasted meats or grain bowls, or enjoy them as a warm snack. Their balance of sweetness, herbaceous notes, and seasoning make them adaptable to various plates.
For best results, ensure the cubes are uniform in size for even cooking. You can prep them a few days ahead by tossing in the seasonings and refrigerating. Leftovers keep in the fridge for 4-5 days and can be reheated in the air fryer or skillet to restore some crispness. They also freeze well for up to 3 months in airtight containers.
Ingredients
- 1 ½ pounds butternut squash peeled, ½ to 1-inch cubes
- 1 tablespoon neutral cooking oil olive or avocado, generic cooking oil
- 1 tablespoon pure maple syrup honey, or brown sugar
- 2 cloves garlic crushed
- 2 teaspoons fresh herbs finely chopped thyme, rosemary or sage
- 1 ¼ teaspoons salt to taste
- Pinch black pepper
Instructions
- Preheat a 6-quart air fryer to 380 degrees.
- Prepare the Butternut Squash: Peel and cut the butternut squash into ½-1 inch cubes if needed. (Learn How to Cut a Butternut Squash.) Whisk together the oil, sweetener, garlic, herbs, salt and black pepper in a large bowl. Add the butternut squash cubes and toss until completely coated.
- Cook in Air Fryer: Add the coated cubes to the preheated air fryer basket and spread them out into a single layer. Cook for 18-20 minutes, giving the basket a shake halfway through cooking.
- Serve with additional fresh herbs and enjoy!
Notes
- Cut squash pieces evenly to ensure they cook uniformly in the air fryer.
- Microwaving the squash briefly before peeling can soften the skin and ease peeling.
- You can prepare the squash and seasoning up to 2-3 days in advance and refrigerate for convenience.
- Store leftovers in the refrigerator for up to 4-5 days or freeze for as long as 3 months in airtight containers.
- Reheat leftover squash in the air fryer, skillet, oven, or microwave for best texture restoration.
