Air Fryer Butternut Squash Cubes uses peeled butternut squash cut into ½ to 1-inch pieces coated in a blend of neutral cooking oil, pure maple syrup, crushed garlic, fresh herbs like thyme, rosemary or sage, along with salt and black pepper. The cubes are spread in a single layer in a preheated 380°F air fryer to roast for around 18-20 minutes, shaken halfway for even cooking.

This method produces squash with a tender interior and lightly caramelized edges, accented by the sweet maple syrup and savory garlic-herb coating. The addition of fresh herbs and garlic brings an aromatic dimension to the naturally sweet and dense squash flesh.

  • 2 cloves garlic crushed
  • 2 teaspoons fresh herbs finely chopped thyme, rosemary or sage
  • 1 ¼ teaspoons salt to taste
  • Pinch black pepper

Instructions

  1. Preheat a 6-quart air fryer to 380 degrees.
  2. Prepare the Butternut Squash: Peel and cut the butternut squash into ½-1 inch cubes if needed. (Learn How to Cut a Butternut Squash.) Whisk together the oil, sweetener, garlic, herbs, salt and black pepper in a large bowl. Add the butternut squash cubes and toss until completely coated.
