Air Fryer Candied Pecans
Description
This recipe uses pecan halves tossed with brown and white sugar, egg white, maple syrup, and ground cinnamon before being cooked in an air fryer. The egg white helps the sugar mixture adhere evenly to the nuts. Cooking in an air fryer at 340°F allows the sugars to caramelize and the surface to crisp without excess oil, giving pecans a sweet, slightly sticky coating.
The nuts are cooked in a single layer on parchment paper trimmed to avoid burning. Midway, they are stirred to ensure even cooking. Once finished, they cool on a cookie sheet to harden so the coating crisps up. These candied pecans can be used as a snack, salad topping, or dessert garnish.
Practical tips include avoiding preheating the air fryer with parchment paper inside to prevent burning. The sugar mixture can be adjusted with spices or add-ins like vanilla or cayenne for variations. Store in an airtight container at room temperature for about a week or refrigerated for longer keeping.
Ingredients
- 2 cups pecan halves
- ¼ cup brown sugar
- ¼ cup white sugar
- 1 egg white
- 1 tablespoon maple syrup
- 1 teaspoon ground cinnamon
Instructions
- Preheat the air fryer at 340° F.
- In a large bowl, add the brown sugar, white sugar, egg white, maple syrup, and cinnamon and stir to combine.
- Then add in the pecan halves and stir until the nuts are coated thoroughly.
- Place the coated pecans in the lined basket in an even layer.
- Line the basket of air fryer with a piece of parchment paper. IMPORTANT: Trim off any paper that sticks up over the top of the basket or it WILL BURN.
- Cook for 5 minutes. Then stir the nuts and cook for another 3-5 minutes, checking them to be sure they are not over cooking.
- While they are cooking, line a baking sheet with parchment paper.
- After cooking, pour them onto the lined cookie sheet and spread them out in a single layer and let them cool for 30 minutes to an hour.
Notes
- Store candied pecans in an airtight container at room temperature for up to one week or refrigerate for 3-4 weeks to maintain freshness.
- Do not preheat the air fryer with parchment paper inside to avoid fire hazards, and trim any excess parchment that rises above the basket edges.
- For variation, add a tablespoon of melted butter, swap cinnamon for pumpkin pie spice, include vanilla extract, or add cayenne pepper for spice.
- You can substitute pecans with other nuts like walnuts or almonds using the same method.
