Description
This recipe slices medium fresh carrots lengthwise and tosses them with olive oil, Italian seasoning, salt, black pepper, and garlic powder. The coated carrots are arranged in a single layer in an air fryer basket, cooked at 400°F for 10-15 minutes, shaking the basket midway to ensure even browning. The carrots become fork tender with some caramelized edges, balancing softness and exterior color.
The addition of Italian seasoning and garlic powder complements the natural sweetness of the carrots, making them more savory and aromatic. Fresh parsley added after cooking provides a fresh herbal finish. These air-fried carrots can be served as a side to fish, chicken, or vegetarian mains.
Peeling is optional if the carrots are young and tender; washing and slicing them uniformly helps ensure even cooking. If carrots are thick, cooking time should be increased slightly. The carrots can alternatively be roasted in an oven at 400°F for about 30 minutes on a parchment-lined sheet if an air fryer is unavailable.

- 10 carrot sliced in half lengthwise, medium, fresh
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning blend

- 1 tablespoon parsley chopped, for garnish
Instructions
- Preheat the air fryer to 400°
- Toss all the ingredients together in a bowl, making sure the carrots are completely coated in oil and seasonings.
- Put the carrots into the air fryer basket in a single layer. (you may have to cook them in batches)
- Cook 10-15 minutes, shaking the basket halfway through. Carrots should be fork tender and browned.
- Garnish with parsley and serve.
