Air Fryer Chicken Bites with Veggies

These air fryer chicken bites combine tender, juicy chicken pieces with a colorful mix of red bell pepper, zucchini, mushrooms, and onion. Seasoned with smoked paprika, garlic salt, thyme, and a touch of red pepper flakes, the chicken and veggies develop a smoky and savory flavor with a bit of warmth. Cooking in the air fryer yields a crispy exterior on the chicken and nicely roasted vegetables without overcooking. This recipe is practical for a quick, one-pan meal delivering protein and vegetables together, making it convenient for a weeknight dinner.

Description

Air Fryer Chicken Bites with Veggies features bite-sized chicken breast pieces tossed with diced red bell pepper, zucchini, baby bella mushrooms, and red onion. The seasoning mix of smoked paprika, garlic salt, dried thyme, and red pepper flakes brings a layered flavor profile that balances smoky, savory, and slightly spicy notes. Using both olive oil and melted butter helps in coating the chicken and vegetables to develop a crisp, flavorful surface during air frying. Cooking at 400°F for about 10 minutes, with stirring halfway through, ensures even cooking and juiciness within the chicken while the vegetables soften comfortably without becoming mushy. The result is a wholesome dish combining meat and vegetables, suitable for serving on its own or alongside a simple grain or salad for a balanced meal.
