  • 1 pound chicken breast cut into 1-inch pieces, boneless skinless
  • 1 large egg
  • 1/2 teaspoon salt each
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried parsley
  • 1 cup panko breadcrumbs
  • ½ cup plain breadcrumbs
  • ¼ cup Parmesan Cheese

Instructions

  1. In a large bowl, combine the chicken, egg, and spices.
  2. In a shallow bowl, mix together the panko breadcrumbs, plain breadcrumbs, and parmesan cheese.
  3. Working with one chicken piece at a time, dredge into the panko mixture, making sure to coat evenly by pressing on all sides of the chicken.
  4. Transfer chicken pieces to the air fryer basket in a single layer (you may have to do this in multiple batches) and generously spray with cooking spray.
  5. Cook on 400ºF for 10 minutes, flipping halfway through. Transfer chicken nuggets and repeat the process with the remaining batch.
  6. Serve immediately with your favorite dipping sauce such as ketchup, honey mustard, BBQ sauce, spicy mayo or yum yum sauce.

Notes

  • Storing leftovers: Place in an airtight container in the fridge for up to about 3 days.
  • Freeze: To freeze, let the nuggets cool completely, then place them in a freezer-safe bag or container. Label it with the date. They will keep in the freezer for up to 2 months.
  • Reheat: For best results, reheat from frozen in a preheated air fryer. Cook them for 10-12 minutes at 400ºF, flipping halfway through.
