Air Fryer Chicken Quesadilla
Description
This recipe assembles quesadillas using cooked, shredded chicken tossed with taco seasoning and salsa, providing spiced and tangy flavors within each tortilla. A generous amount of shredded Mexican cheese is added for melting inside the folded flour tortillas.
After securing each quesadilla with toothpicks, they are crisped in a preheated 400 degrees Fahrenheit air fryer, flipping halfway through. The air frying method offers a crispy outer texture without the need for excessive oil, effectively blending the textures and flavors inside.
The quesadillas are best served fresh and hot, accompanied by sour cream, guacamole, or salsa as desired. They make convenient snacks, lunches, or light dinners.
Using pre-cooked or rotisserie shredded chicken simplifies preparation. Different cheeses can be used based on preference. Leftovers can be stored refrigerated up to five days.
Ingredients
- 2 cups chicken shredded, cooked
- 2 Tbsp taco seasoning
- 1/2 cup salsa
- 2 cups Mexican shredded cheese
- 4 flour tortillas medium size
Instructions
- Preheat an air fryer to 400 degrees Fahrenheit and run the basket with olive oil. If your air fryer does not have a pre-heat option, then run the air fryer for 5 minutes at 400 degrees Fahrenheit.
- In a mixing bowl, stir together the cooked shredded chicken, taco seasoning and salsa until combined.
- Then assemble the quesadillas. Lay a tortilla on a clean work surface. Spread approximately 1/4 of the chicken mixture on one side of the tortilla and top with 1/2 cup of the shredded cheese.
- Fold the tortilla in half and secure the tortilla in place with toothpicks to keep the quesadilla closed while cooking.
- Continue this process until all the quesadillas are assembled.
- Place the quesadillas in the air fryer in a single layer. You may need to work in batches depending on the size of your air fryer.
- Cook the quesadillas in the air fryer for 6 minutes, flipping the quesadillas halfway through the cook time.
- Remove the quesadillas onto a cutting board. Carefully remove the toothpicks. Slice them and then they are ready to serve and enjoy!

- Shredded rotisserie or pre-cooked chicken can be used for convenience.
