Air Fryer Chicken Wings
Description
Air Fryer Chicken Wings feature a dry-rub seasoning mix including salt, pepper, garlic powder, paprika, and baking powder to encourage crispiness during air frying. The wings are dried thoroughly beforehand to ensure a crunchy outer texture. After air frying at 400°F, the wings are tossed in a homemade buffalo sauce made from hot sauce, brown sugar, and water, infusing a sweet and spicy coating. This technique uses the air fryer to achieve a fried texture with less oil.
The texture is crispy on the skin with tender meat inside, complemented by the sticky, sweet heat of the buffalo sauce. Turning the wings periodically during cooking promotes even browning. The sauce melts slightly on contact, coating each wing thoroughly.
These wings serve well freshly cooked alongside celery sticks or a dipping sauce. The recipe yields about 24 wings, sufficient for several servings. Portions of three wings each are typical for serving size. The wings can also be cooked from frozen by adding time, though crispness depends on thorough drying.
For best results, use aluminum-free baking powder to avoid off flavors. The wings should rest briefly after cooking before saucing. The recipe recommends tossing in sauce just before serving to maintain crispiness.
Ingredients
- 4 pounds chicken wings , halved at joints, wing tips discarded
- 2 Tablespoons baking powder aluminum free
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper freshly ground
- 1 teaspoon paprika
- 1 teaspoon garlic powder
Buffalo Sauce:
- 1/3 cup hot sauce Frank's Wings brand
- 1 1/2 cups light brown sugar
- 1 Tablespoon water
Instructions

- Season: Combine salt, pepper, garlic powder, paprika, and baking powder in a small bowl then sprinkle seasoning over the wings, tossing to evenly coat.
- Air Fry: Preheat air fryer to 400 degrees. Spray the fry basket with cooking spray. Arrange wings in an even layer, skin side up. Spray the top of the wings with cooking spray and air fry, turning the wings every 5 minutes for about 15 minutes or until crispy. Total cook time will depend on the size of the wings and air fryer but may take up to 20 minutes.
- Sauce: Remove from air fryer allow to rest for 5 minutes before tossing in desired sauce.
- Buffalo wing sauce: In a medium saucepan over medium heat stir together all sauce ingredients. Mix well until sugar has dissolved.
Notes
- Use aluminum-free baking powder, like Rumford brand, for crisp wings and to avoid an off taste.
- Dry chicken wings thoroughly before seasoning to help achieve a crispy skin.
- You can cook frozen wings by adding about 10 extra minutes to air frying time, ensuring they cook through and crisp up.
- After cooking, let wings rest for 5 minutes before tossing in sauce to retain skin texture.
- Buffalo sauce does not include nutritional information in this recipe.
