Air Fryer Chimichanga Recipe

With your air fryer you can make crispy chimichangas without the mess of deep-frying. Get the cheesy, crispy goodness of traditional chimichangas with a healthier twist.

Ingredients
- 3 cups chicken cooked and shredded
- 2 cups cheese shredded
- 1 cup diced tomatoes and chilies drained
- 3-4 pickled jalapenos diced
- 2 teaspoons ground cumin
- 5 large flour tortillas
- 2 tablespoons butter softened or oil
Instructions
- Combine the chicken, cheese, tomatoes, diced jalapeños, and cumin in a mixing bowl.
- Scoop up 1/2 cup of chicken and put it in the center of the tortilla.
- Fold in the left and right sides of the tortilla edge. Fold meat should reach the inside fold.
- Fold in the bottom edge and roll the chimichanga to the top, sealing the meat tight. Repeat steps 2-4 for all the tortillas.
- Preheat air fryer at 400 degrees F for 3 minutes.
- Place the chimichangas in the sprayed air fryer basket with the sealed edge down.
- Brush the top, sides, and ends with butter or spray with cooking oil.
- Cook at 400°f for 4 minutes, flip, and brush with butter. Cook for four more minutes.
- Remove and let rest.
Notes
- Use your favorite cheese. I like Colby Jack or cheddar cheese.
- You can use corn tortillas, but they are more difficult to work with and tend to crack..
- When folding your chimichangas, make sure they're tight enough to prevent filling from spilling out but not so tight that they tear.
- Give your chimichangas some space in the air fryer basket. Crowding can lead to uneven cooking and less crispiness.
- Always start with the seam side down to help seal the edge with the heat.
