  • 4-5 pound corned beef brisket see note
  • 1/3 cup Dijon mustard
  • 1 tablespoon vinegar white vinegar, or apple cider vinegar
  • 3 tablespoon brown sugar
  • 2 tablespoon garlic powder
  • 1 pickling seasoning usually included with meat, packet

Optional extra spices for the top

  • 1 tablespoon mustard seed
  • 1 teaspoon caraway seeds
  • 1 teaspoon thyme
  • 8 black peppercorns

Instructions

  1. Preheat the air fryer to 350 degrees F.
  2. While it preheats, combine the mustard, vinegar, brown sugar, and garlic powder. 
  3. If you are using extra spices on top of the brisket, combine the mustard seeds, caraway seeds, thyme, and peppercorns in a bowl.
  4. Open the brisket package and remove the seasoning packet. Pour it in a bowl with the extra spices if using them.
  5. Once the air fryer is preheated, line the basket with aluminum foil. Take the brisket out of its package and rinse it with cold water. Pat it dry, and put it in the basket.
  6. Smear the mustard mixture over the top of the brisket. Sprinkle the spices from the bowl or seasoning package on top.
  7. Air fry at 350 degrees F for 40 minutes. Pull out the basket and spoon some of the juices at the bottom on top of the brisket. If there aren't enough juices, sprinkle it with 1 tablespoon of water. 
  8. Air fry at 350 degrees F for another 15 minutes. When it is done, use an instant-read thermometer to verify that the internal temperature of the meat has reached 145 degrees F. If not, air fry it for another 5-10 minutes until done.
  9. Use the aluminum foil to lift the air fryer corned beef out of the air fryer basket and put it on a serving dish. Let it rest for 10 minutes before slicing.

Notes

  • Use a 5.8-quart air fryer with a square basket to fit a 5-pound brisket; smaller or round baskets may only fit smaller briskets.
  • Do not preheat the air fryer with foil inside the basket.
  • Line the basket with foil but do not cover the brisket to allow bark formation.
  • Baste the brisket with cooking juices after the initial 40 minutes to keep it moist.
  • Slice across the grain for maximum tenderness.
