Air Fryer Cucumber Fritters- No Bread Crumbs

These Air fryer Cucumber Fritters, coated with oats flour and spices have amazing crispy exterior and a melt-in-mouth interior. Made quickly in little oil, these air fryer no breaded cucumber chips or fries gather in less than 20 min. Dunk them into a dip of your choice for a quick vegan snack!

Ingredients
- 2 medium cucumber english cucumber works best
- 3 tablespoon cornflour
- ¼ cup Oats flour
- 2.5 tsp olive oil
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- salt to taste
- 1 teaspoon lemon juice optional
- water to mix cornflour as needed

Instructions
- Wash the fresh cucumbers and dry them with a kitchen cloth. Slice them round with ¼ inch thickness or as desired. Too thin slices can't hold the coatings.While you prep cucumbers, pre heat air fryer at 190℃ for about 5-10 min.
- In a large bowl, add sliced cucumbers and mix them with salt, turmeric powder and red chili powder. If you don't have oats flour, you may dry grind good quality rolled oats or use breadcrumbs. In small bowl, mix cornflour with water to make a not-so thick paste or batter. The batter should stick to cucumber when dunked into it. Roll the cornflour coated cucumber with oats flour from all sides and place in a plate.Do this with all the cucumber slices.
- Grease air fryer basket with olive oil and place the cucumber fritters at even gaps. Brush oil over the fritters too. Air fry these fritters for about 10-15 min or till browned at 190℃. Make sure to flip them half way through to cook from the other side as well.
- The Crispy and browned Air fried Cucumber Fritters are ready to serve. Team them with tomato ketchup or a sauce of your choice.
Notes
- This recipe of air frying cucumber works fine if you want to bake the fritters in oven. You may have to pre heat the oven at 220°C for about 10 min and bake for 15-20 minutes, or until the fritters are golden brown and crispy. You may want to flip them halfway through the baking time for even crispiness.
- Make sure to dry cucumbers after washing and before slicing or else they won't be crispy. While you may peel them, I like the fritters with peel.
- When using air fryer for making chips, usually there is not much need to flip the vegetable. Just shaking is fine. But since this is oat coated fritter, I had flipped it to cook from both sides for browning.
- Apply oil over fritters and air fryer basket for non sticky frying.
- Serve the fritters fresh as they lose crispiness if stored for long.
