Air Fryer Delicata Squash
Description
The air fryer delicata squash recipe involves slicing the squash into about 1/4 inch thick pieces after removing seeds. Tossing the slices with olive oil, rosemary, and salt coats them for roasting. Cooking at 400°F for around 10 minutes crisps the edges while keeping the center soft and cooked through. Shaking the basket halfway ensures even heat distribution. The result is a lightly herbed, tender squash that holds its shape well without becoming mushy.
Alternative seasoning blends provided in the notes add a variety of flavor profiles such as sweet, spicy, curry, and Italian, allowing customization. The recipe accommodates skipping oil entirely if desired, letting the natural squash flavor come forward. This method makes delicata squash a practical vegetable side dish that pairs well with many meals.
The quick air fryer technique uses less oil and time compared to traditional roasting, offering convenience while preserving texture and flavor.
Ingredients
- 1 delicata squash
- 1/2 Tablespoon olive oil
- 1/2 teaspoon rosemary
- 1/2 teaspoon salt
Instructions
- Cut the delicata squash in half lengthwise. Scoop the seeds out and discard.
- Slice the squash into slices about 1/4 inch thick.
- Put the slices in a bowl and add the olive oil, rosemary and salt. Toss to mix well.
- Put the squash slices in an air fryer basket. Set the air fryer at 400 F for 10 minutes. After about 5 minutes take the basket out and shake it to redistribute the squash and ensure even cooking.
- Check the squash at the end of the 10 minutes. It should be cooked through and starting to brown around the edges. Put it back in for another 2-3 minutes at 400 F if it is not done.
Notes
- The olive oil can be omitted if a lower-fat option is desired.
- Sweet seasoning options include cinnamon and pumpkin pie spice, finished with a drizzle of maple syrup after cooking.
- For a spicy version, substitute rosemary with chili powder and cayenne pepper.
- Curry seasoning combines curry powder, cinnamon, and black pepper for a warm flavor.
- Italian flavor involves Italian seasoning, garlic powder, and parmesan cheese added after cooking.
