Air Fryer Easter Rocky Road

We combined our favourite Easter treats to make a delicious, and pretty air fryer Easter rocky road.

Ingredients
- 100 g unsalted butter
- 300 g Chocolate Egg broken into bits
- 2 Tbsp golden syrup
- 4 Plain Digestives/Graham Crackers
- 180 g mini eggs
- 100 g mini marshmallows
For Decorating
- 1 creme eggs
- 1 Caramel Eggs
- 60 g mini eggs
- 3 Chocolate Rabbits
- 2 Mini Chocolate Rabbits

Instructions
- Place the chocolate egg (broken into pieces), butter (in chunks) and golden syrup into an air fryer friendly container such as silicone. Air fry at 120c/250f for 5 minutes to melt the butter and the chocolate.
- When the air fryer beeps, give it a good stir.
- In the meantime, in a bowl add the mini eggs, and use the top of a rolling pin to crush it into tiny pieces, also add the biscuits and the marshmallows and stir. We recommend a few mini eggs that are whole for some texture and prettiness.
- Add the melted chocolate mixture to the broken bits and give it a good stir. Then transfer it back to your silicone pan. Then decorate the top with favourite leftover chocolate. We included the kids chocolate bunnies, more mini eggs and sliced crème eggs and sliced caramel eggs.
- Allow to chill in the fridge for a couple of hours and then slice into 9 pieces before serving.
Notes
- Quantity. We find this makes 9 medium slices. You can make them smaller or use a smaller container and make less of them. We used our 7.5 inch silicone baking pan.
