Instructions
- Preheat the air fryer to 400°F.
- Rinse and dry the potatoes. Trim off any blemishes, but do not peel. Cut the potatoes in half lengthwise.
- Transfer the potatoes to a large bowl. Add the oil, garlic, salt, black pepper, Italian seasoning, and paprika. Toss until potatoes are well coated with the seasoning.
- Transfer the potatoes in a single layer to the air fryer basket. Cook in batches if needed.
- Cook the potatoes until tender when pierced with a knife, 12-15 minutes, shaking halfway through. At the 10 minute mark, sprinkle some parmesan cheese on top.
- Remove the potatoes from the air fryer. Sprinkle with the parsley and additinal parmesan if you like. Serve hot.

Notes
- Make sure to dry the potatoes: After washing and scrubbing the potatoes, don't skip this step. Use a kitchen towel to dry the potatoes thoroughly. Wet potatoes will not allow the oil and seasoning to stick, so they won't crisp well.
- Don't skip the oil: Many people say that the point of using an air fryer is to skip oil, but I don't recommend doing that if you like crispy potatoes.
- Bake in the oven: Transfer the seasoned potatoes to a baking sheet. Flip the potatoes so the cut sides are flat on the baking sheet. Bake until the potatoes are crisp and tender so they easily pierce with a fork, about 30-40 minutes, depending upon the size of the potatoes. Flip the potatoes halfway through for even cooking.
