With just a handful of ingredients and minimal prep, these Air Fryer Fingerling Potatoes can be made in just 20 minutes. Crispy on the outside and tender on the inside, they are a must-try for potato lovers!

  • 1 pound fingerling potatoes
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic minced
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper freshly ground
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika optional
  • 2 tablespoons Parmesan Cheese optional, skip for vegan, grated, optional
  • parsley for garnish, freshly chopped or dried

Instructions

  1. Preheat the air fryer to 400°F.
  2. Rinse and dry the potatoes. Trim off any blemishes, but do not peel. Cut the potatoes in half lengthwise.
  3. Transfer the potatoes to a large bowl. Add the oil, garlic, salt, black pepper, Italian seasoning, and paprika. Toss until potatoes are well coated with the seasoning.
  4. Transfer the potatoes in a single layer to the air fryer basket. Cook in batches if needed.
  5. Cook the potatoes until tender when pierced with a knife, 12-15 minutes, shaking halfway through. At the 10 minute mark, sprinkle some parmesan cheese on top.
  6. Remove the potatoes from the air fryer. Sprinkle with the parsley and additinal parmesan if you like. Serve hot.

Notes

  • Make sure to dry the potatoes: After washing and scrubbing the potatoes, don't skip this step. Use a kitchen towel to dry the potatoes thoroughly. Wet potatoes will not allow the oil and seasoning to stick, so they won't crisp well.
  • Don't skip the oil: Many people say that the point of using an air fryer is to skip oil, but I don't recommend doing that if you like crispy potatoes.
  • Bake in the oven: Transfer the seasoned potatoes to a baking sheet. Flip the potatoes so the cut sides are flat on the baking sheet. Bake until the potatoes are crisp and tender so they easily pierce with a fork, about 30-40 minutes, depending upon the size of the potatoes. Flip the potatoes halfway through for even cooking.
