Air Fryer Fingerling Potatoes
Description
This recipe calls for halving fingerling potatoes and seasoning them with olive oil and a blend of spices including garlic powder, onion powder, paprika, salt, pepper, and freshly grated Parmesan cheese. A parchment liner prevents cheese from sticking or burning in the air fryer basket. Cooking at 400°F for 14-18 minutes with a basket shake halfway ensures even crisping and tenderness.
The potatoes develop a crispy, golden exterior while maintaining a creamy interior. The Parmesan adds an umami richness, and fresh parsley garnish gives a fresh herbal note.
They make a convenient side that pairs well with many mains. Leftovers can be refrigerated in an airtight container and reheated in the air fryer, oven, or microwave to refresh crispness. The recipe can be adapted with different flavor variations and accommodates various potato types as substitutes.
Omitting Parmesan makes this recipe dairy-free and vegan. Parchment paper is recommended for cleaner cooking and to protect the air fryer basket.
Ingredients
- 1 ½ pounds fingerling potatoes cut in half lengthwise
- 1 - 2 tablespoon olive oil depending on how crispy you want the potatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup Parmesan Cheese freshly grated
- parsley garnish, 2 tablespoon fresh leaves, finely chopped
Instructions
- Preheat your air fryer to 400°F and lightly grease the basket with non-stick olive oil spray.
- Then toss the halved fingerling potatoes in a mixing bowl with the olive oil, garlic powder, onion powder, paprika, salt, pepper, and parmesan cheese.
- Carefully line the bottom of your air fryer with parchment paper so the cheese doesn’t fall off into the basket or get stuck on the grate.
- Add seasoned potatoes to the preheated air fryer and air fry at 400°F for a total of 14 – 18 minutes. Shake the basket at the 10-minute mark to ensure they are cooking evenly. Every air fryer is different, so check at the 14-minute mark, then decide if you want them to be crispier.
- Enjoy immediately, and serve with a sprinkle of parsley. Enjoy!
Notes
- Flavor variations include pesto, balsamic, rosemary, buttery, Cajun, and lemony; see the original blog for instructions.
- Baby potatoes such as red, Yukon Gold, or russets can substitute for fingerlings.
- Omit Parmesan cheese to make this recipe dairy-free and vegan.
- Do not freeze cooked fingerling potatoes to maintain texture.
- Store leftovers in an airtight container in the fridge for 4–5 days.
- Reheat in air fryer at 300°F for 5–7 minutes, oven at 350°F for 5–10 minutes, or microwave for 1–2 minutes.
