Description
The ham steak is trimmed or cut to fit the air fryer basket and cooked briefly at high heat. Meanwhile, a glaze is prepared by combining brown sugar, maple syrup, pineapple juice, and apple cider vinegar, which is brushed onto both sides of the ham. Pineapple chunks are placed on top, also brushed with glaze, and the steak is cooked further to caramelize the sugars and warm the fruit.
This cooking technique results in a ham steak with a slightly crisped, caramelized surface and juicy interior, complemented by sweet and tangy pineapple pieces. An optional step adds extra brown sugar on pineapple chunks for more caramelization. Cooking to an internal temperature of 145°F ensures the ham is safe and tender.

Ingredients
- 1 ham steak (8-10 ounces)
- 1 cup pineapple chunks
- 3 tablespoons brown sugar
- 2 tablespoons maple syrup
- 1/3 cup pineapple juice (use juice drained from pineapple chunks)
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar optional
Instructions
- Cut the ham steak to fit in the air fryer basket if needed. A little overlap between the pieces in the basket is OK, but only a little.
- Put the ham steak in the air fryer and cook at 400 degrees F for 4 minutes.
- While it cooks, drain the pineapple, reserving the liquid. Mix 1/3 cup of the juice with the brown sugar, maple syrup, and vinegar.
- When the 4 minutes are up, brush the top of the steak with the brown sugar mixture. Then flip it over and brush the other side.
- Put the pineapple chunks on top of the ham and brush them with the glaze mixture.
- Air fry at 400 degrees F for 8 minutes.
- Verify the internal temperature has reached 145 degrees F with an instant-read thermometer.
- Optional - if you want extra sweet and caramelized pineapple, pull the basket out, sprinkle a tablespoon of brown sugar on the pineapple chunks, and air fry at 400 F for 2 more minutes.
Notes
- Use thick-cut ham steaks for best results; reduce cooking time for thinner cuts by 2-3 minutes.
- If maple syrup is unavailable, brown sugar can replace it in the glaze.
- Using pineapple slices instead of chunks is an option.
- Do not skip the brown sugar glaze as it adds flavor and keeps the ham moist.
