  • 1 tablespoon olive oil
  • 1 ½ pounds russet potato
  • ½ teaspoon seasoned salt
  • ½ teaspoon garlic powder
  • ¼ cup onion chopped
  • ¼ cup red bell pepper or green bell pepper, diced
  • 1 tablespoon butter melted

Instructions

  1. Peel potatoes (if desired) and cut into ½" chunks.
  2. Toss potatoes with olive oil, seasoned salt & garlic powder.
  3. Add to the air fryer basket and cook at 380°F for 15 minutes.
  4. Combine onion, bell pepper and butter. Add to the air fryer, reduce heat to 340°F and cook an additional 15 minutes or until vegetables and potatoes are tender.
  5. Serve immediately.

Notes

  • Store leftovers in a sealed container in the refrigerator for up to 4 days.
  • Reheat leftovers in the microwave for a couple of minutes or place them back in the air fryer for about 5 minutes to restore crispness.
