Description

After an initial cook to start softening, onions, bell peppers, and melted butter are added to deepen the flavor profile and soften the vegetables. The lower heat finish ensures everything cooks evenly without burning, producing tender potatoes with a lightly crisp exterior. The potatoes cook in two stages in the air fryer, first at a higher temperature to begin crisping and then at a lower temperature alongside the vegetables until everything is tender. This technique helps prevent the vegetables from overcooking while allowing the potatoes to maintain texture. Serving them immediately preserves the balance of crispy and tender textures.
Leftovers can be stored in an airtight container refrigerated up to four days and reheated either in the microwave or returned to the air fryer to regain some crispness. This makes the dish practical for meal prep or using leftover cooked potatoes.
Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds russet potato
- ½ teaspoon seasoned salt
- ½ teaspoon garlic powder
- ¼ cup onion chopped
- ¼ cup red bell pepper or green bell pepper, diced
- 1 tablespoon butter melted
Instructions
- Peel potatoes (if desired) and cut into ½" chunks.
- Toss potatoes with olive oil, seasoned salt & garlic powder.
- Add to the air fryer basket and cook at 380°F for 15 minutes.
- Combine onion, bell pepper and butter. Add to the air fryer, reduce heat to 340°F and cook an additional 15 minutes or until vegetables and potatoes are tender.
- Serve immediately.
Notes
- Store leftovers in a sealed container in the refrigerator for up to 4 days.
- Reheat leftovers in the microwave for a couple of minutes or place them back in the air fryer for about 5 minutes to restore crispness.
