Ingredients

Servings
  • 10 jalapeno pepper halved and de-seeded, fresh
  • 250 g (½lb) cream cheese room temperature
  • 6 Bacon cooked until crispy (the air fryer is great for this, strips, streaky
  • 2 tbsp chives chopped
  • ½ cup cheddar cheese grated
  • salt to taste
  • black pepper to taste
  • ½ tsp garlic powder
  • 2 cups flour seasoned with 1 tsp salt
  • 3 egg beaten
  • 2 cups breadcrumbs
  • 1 tsp salt
  • ½ cup Parmesan Cheese grated

Instructions

  1. Finely chop the crispy bacon then add to the cream cheese with the chives and cheddar cheese. Season with salt, pepper and garlic powder then stir to combine,
  2. Using a teaspoon, stuff the cream cheese mixture into the halved jalapenos.
  3. Place the seasoned flour in a shallow bowl, beat the eggs into another bowl and in a third bowl, combine the breadcrumbs with a tsp of salt and the parmesan cheese.
  4. Coat the jalapenos first in the flour, then in the egg, repeating these steps for a thicker coating and finally into the breadcrumbs. Press the breadcrumbs onto the stuffed jalapenos to ensure even coverage.
  5. Place the breaded jalapenos in the air fryer basket then spray with olive oil. Air fry at 205°C/400°F for 10 minutes until crisp and golden then serve with lemon wedges.
