Description

Air Fryer Lamb Chops (Tender and Juicy) use rib chops about an inch thick, marinated in olive oil, red wine vinegar, minced garlic, taco seasoning, and dried oregano. The marinade flavors the meat deeply and tenderizes slightly. After marinating for a total of about an hour (half in the fridge, half at room temperature), the lamb chops are cooked at 400°F in the air fryer, flipping halfway through cooking to develop an even sear.

The high temperature cooks the lamb quickly, producing a browned exterior with controlled doneness ranging from rare to well-done by monitoring internal temperature. A resting period after cooking allows juices to redistribute, keeping the meat moist. The optional chimichurri sauce provides a herbaceous and acidic complement to the richly seasoned chops.

  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 3 garlic minced, cloves
  • 3 tablespoon taco seasoning taste the seasoning and adjust the salt to your taste before seasoning the chops, store-bought or homemade keto
  • 1 tablespoon oregano dried
  • 1 lb lamb chops from the Rib, 1-inch thick
  • chimichurri sauce to serve with -- OPTIONAL – See recipe below

Instructions

  1. Make the chimichurri sauce and reserve!
  2. MARINATE: Meanwhile, in a large plastic sealable bag, combine olive oil, vinegar, garlic, taco seasoning, and oregano. Shake to combine and then add the lamb chops, rubbing the marinade into the meat in order to coat.
  3. Seal the plastic bag and chill it in the fridge for 30 minutes. Then transfer the bag to the counter to marinate for extra 30 minutes at room temperature.
  4. Preheat the air fryer to 400°F (204° C).
  5. COOK: Place lamb chops into the air fryer basket in a single layer but do NOT overcrowd it. For medium-rare (135° F or 57° C final internal temperature), cook the chops for 5-7 minutes, flipping halfway. Internal temperatures: 125°F is rare, 135° F is medium-rare, 145°F is medium and 150°-160° F is medium-well to well-done.
  6. Repeat the cooking process with the remaining chops, if any. It will depend on the size of your air fryer basket. Make sure to allow the juicy lamb chops to rest, tented with foil, for 5 minutes before serving with the chimichurri sauce.

  • Remove chops from the refrigerator 20–30 minutes before cooking to bring to room temperature for even cooking.

  • Let lamb chops rest tented with foil for 5 minutes after cooking to retain juices.
  • Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze up to 2 months; thaw overnight in the fridge before reheating.
  • Reheat gently in the microwave for 1-2 minutes until hot, covered to maintain moisture.
