Air Fryer Meatloaf

This Air Fryer Meatloaf mixes ground beef with sautéed onions, breadcrumbs, egg, and a blend of seasonings including Dijon mustard and parsley. Formed into a compact loaf, it cooks in the air fryer with a tangy ketchup and brown sugar glaze applied midway, resulting in a moist, tender loaf with a caramelized top. Resting it before slicing helps maintain neat slices and enhances juiciness. The streamlined air fryer method offers an alternative to traditional oven baking without sacrificing texture or flavor.

Description

The Air Fryer Meatloaf incorporates minced onion sautéed in olive oil with ground beef, egg, bread crumbs, ketchup, Dijon mustard, seasoning salt, garlic powder, parsley, and milk to create a well-seasoned, moist mixture. Shaped into a loaf and cooked in an air fryer with a foil sling for easy handling, it first bakes partially before being glazed with a ketchup, brown sugar, mustard, and garlic powder mixture. The glaze caramelizes during the final cooking phase, adding a glossy, flavorful crust. Allowing the meatloaf to rest after cooking helps the juices redistribute and makes for cleaner slicing.

The blend of seasonings and the glazing step lend a balance of savory and sweet elements to the meatloaf. Using the air fryer reduces overall cooking time and cleanup, while the foil sling minimizes sticking and eases serving. This recipe is suitable for home cooks looking for a classic meatloaf with a convenient cooking method and a well-balanced flavor profile.

Cool the meatloaf for 5 to 10 minutes before slicing to avoid crumbling. The leftovers keep well for 3 to 4 days in the refrigerator and can be reheated efficiently in the air fryer at 350 degrees for about 5 minutes per slice. The meatloaf mixture or the cooked loaf can be frozen for up to six months when wrapped properly, with thawing recommended before cooking or reheating.

Ingredients

Servings
  • 1 medium onion minced
  • 1 tbsp olive oil
  • 1 pound ground beef
  • 1 large egg
  • 1/4 cup bread crumbs
  • 1 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 tsp seasoning salt
  • 1/2 tsp garlic powder
  • 1 tbsp parsley freshly chopped
  • 1/2 cup milk

Glaze

  • 2 tbsp ketchup
  • 2 tsp brown sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder

Instructions

  1. Saute minced onion in 1 Tablespoon of olive oil. Make a foil sling, place it in the air fryer- this will make it easier to lift the meatloaf out of the pan later. You do not need to line the whole basket with foil.
  2. Use your hands to mix the ground beef, egg, bread crumbs, ketchup, mustard, seasoning salt, pepper, garlic powder, parsley, milk, and sauteed onion. Form this mixture into a loaf about 6 inches long, 4 inches wide, and 2 inches high.
  3. Place the meatloaf onto the foil sling Bake the meatloaf for 15 minutes at 370 degrees. During this cooking time, make the glaze.
  4. In a small bowl, mix together the ketchup, brown sugar, mustard, and garlic powder. Pour the glaze over the top of the meatloaf. Return the meatloaf to the air fryer and bake for another 15 minutes or until a meat thermometer reaches 160 degrees.
  5. When the meatloaf is finished cooking, rest it on the counter for 5-10 minutes before cutting it with a sharp serrated knife.

Notes

  • Using a foil sling in the air fryer simplifies lifting the meatloaf and eases cleanup.
  • Rest the meatloaf for several minutes before slicing to maintain shape and juiciness.
  • Leftover cooked meatloaf keeps 3-4 days refrigerated and reheats well in the air fryer.
  • Both uncooked and baked meatloaf can be frozen for up to six months; thaw before cooking or reheating.
