Air Fryer Meatloaf
Description
The meatloaf combines ground beef with dry breadcrumbs, ketchup, eggs, minced dried onion, milk, parsley, Dijon mustard, garlic powder, salt, and pepper. Formed into a thick loaf, it's placed on parchment in the air fryer basket. Initial cooking at 370°F develops a crust while preserving moisture inside.
The brown sugar, ketchup, and Worcestershire sauce glaze brushed in stages during cooking caramelizes on top, creating a sweet crust contrast. The air fryer offers efficient heat circulation for even baking in a compact form. Removing the loaf to rest after cooking allows juices to redistribute, preventing dryness.
This meatloaf is suitable for a main dish served with sides or sandwiches. The recipe notes recommend using ground beef with 80/20 or 85/15 lean-to-fat ratio for juiciness. Preheating the air fryer and avoiding overmixing helps maintain tenderness. Parchment paper aids cleanup.
Leftovers keep well refrigerated up to four days in airtight storage, making this a practical option for meal prepping or family dinners.
Ingredients
- 2 pounds ground beef
- 3/4 cup breadcrumb dry, plain
- 1/3 cup ketchup 1 Tablespoon
- 2 egg
- 3 Tablespoons onion dry minced
- 1 Tablespoon milk
- 1 Tablespoon parsley freshly minced
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper ground
- 1/2 cup brown sugar
- 2 Tablespoon Worcestershire sauce
Instructions
- Mix the ground beef, breadcrumbs, 1 tablespoon of the ketchup, eggs, dry onions, milk, parsley, dijon mustard, garlic powder, salt, and pepper together in a large bowl until combined.
- Form the mixture into a 4-inch-thick loaf. Place the loaf into the basket of an air fryer fitted with a sheet of parchment paper.
- Spray the top with olive oil spray and cook in the air fryer at 370 degrees Fahrenheit for 20 minutes.
- In the meantime, whisk the remaining 1/3 cup of ketchup, brown sugar, and Worcestershire sauce together in a small bowl. After the meatloaf has cooked for 20 minutes, brush ¾ of the sauce onto the loaf.
- Cook for another 10 minutes, then brush the top with the remaining sauce. Cook for an additional 3-5 minutes until crust is nicely browned. Allow your meatloaf to rest for about 10 minutes before slicing and serving.
Notes
- Use ground beef with an 80/20 or 85/15 fat-to-lean ratio to keep the meatloaf juicy.
- Mix ingredients only until combined to prevent a tough texture.
- Preheat the air fryer before cooking for best temperature control.
- Line the air fryer basket with parchment paper to prevent sauce leaks and facilitate cleanup.
- Store leftovers in airtight containers in the refrigerator for up to 4 days.
