Air Fryer Meatloaf Recipe + Video

Learn the easy steps and top tips to make the most perfectly moist, delicious, melt-in-your-mouth amazing air fryer meatloaves with a tangy ketchup glaze in only about 30 minutes.

Ingredients
- 1 pound ground beef ground chuck or lean
- ½ cup chopped bell pepper
- ½ cup chopped onion
- ½ cup chopped carrot
- ½ cup chopped celery
- 2 cloves garlic
- 2/3 cup breadcrumbs or GF breadcrumbs
- 3 tablespoons milk
- 1 large egg
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1/3 cup ketchup
- 1-2 tablespoons hot sauce I used Cholula
Instructions
- Roughly chop the fresh produce. It does not need to be chopped well because it's going in the food processor.
- Set out a food processor. Add the chopped bell peppers, onions, carrots, celery, and garlic to the food processor. Pulse until the vegetables are ground into a fine mince.
- Add the breadcrumbs, milk, eggs, Italian seasoning, salt, and pepper to the food processor. Pulse again until all ingredients are well combined.
- Finally add the ground beef to the food processor. Pulse until the ground meat is mixed evenly into the rest of the ingredients, and the mixture is smooth. (Do not overmix the meat mixture.)
- Divide the meat mixture into two equal portions. Shape each portion into a loaf about 3 inches across and 5-6 inches long.
- Place the meatloaves in the air fryer basket. Set the air fryer to 360°F and air fry for 15 minutes.
- Meanwhile, set out a small bowl and combine the ketchup and hot sauce. Mix well.
- Once the timer goes off, open the air fryer basket and spoon the ketchup mixture over the top of each meatloaf. Use the spoon to maneuver the ketchup so it coats the top of the meatloaf well. Close the air fryer basket and continue to air fry for 6 to 9 additional minutes, until the internal temperature reads 160°F on a meat thermometer.
- Slice the meatloaf and serve warm.
Notes
- This is a great dish to make ahead and freeze for later. If freezing cooked meat loaves, it's important to let them cool completely, then wrap them well in a layer of plastic wrap and aluminum foil. Freeze for up to 3 months. Make sure to thaw them completely before cooking.
- Leftover meatloaf will keep well for up to 4 days in an airtight container in the fridge.
