Air Fryer Mexican Street Corn Recipe

Make Mexican street corn in your air fryer! This quick elote recipe delivers perfectly charred corn topped with tangy lime crema, cotija cheese, and chili powder in just 15 minutes.

Ingredients

  • 4 ears corn shucked, and silks removed
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/2 teaspoon lime zest
  • 1 teaspoon lime juice fresh
  • 1/3 cup cotija cheese
  • 1/2 teaspoon chili powder
  • 2 tablespoons cilantro chopped, fresh
  • lime for serving, fresh, wedges
  • salt for serving, sea salt

Instructions

  1. Zest and juice 1/4 the lime. Cut the remaining 3/4 into wedges.
  2. Mix the mayo, Greek yogurt, fresh lime juice, and lime zest in a small mixing bowl. Set aside.
  3. Place the four ears of corn (or however many will fit) in the air fryer. Air fry at 400 degrees F for 5 minutes, then turn and air fry for another 5 minutes.
  4. Transfer the corn to a serving platter.
  5. Brush all over with the mayo mixture.
  6. Sprinkle it with cotija cheese and chili powder. Top with cilantro.
  7. Serve with sea salt and lime wedges.

Notes

  • Fresh sweet corn is best for this recipe - look for ears with bright green, tightly wrapped husks and golden-brown silk.
  • Make sure you remove ALL the silk. The strands can burn in the air fryer.
  • Don't overcrowd your air fryer basket - the corn needs space to cook evenly
  • If your corn is too long for your air fryer cut them in half or trim off the ends.
