Ingredients

  • 4 egg large
  • salt to taste
  • black pepper to taste
  • 1/4 cup bell pepper diced
  • 1/4 cup spinach chopped
  • 1/4 cup cheese shredded, low-fat
  • cooking spray nonstick

Instructions

  1. Preheat the air fryer to 360°F.
  2. In a medium bowl, beat the eggs and season with salt and pepper.
  3. Stir in the bell peppers, spinach, and cheese into the egg mixture.
  4. Spray a small, air fryer-safe pan with nonstick cooking spray, and pour the egg mixture into the pan.
  5. Place the pan in the air fryer and cook for 5 minutes, or until the omelet is cooked through and fluffy. Run a butter knife around the rim of the pan to loosen the omelet, then flip the pan upside-down onto a plate. Serve immediately.
