Air Fryer Orange Chicken Meatballs
Description
The Air Fryer Orange Chicken Meatballs recipe combines seasoned ground chicken with panko breadcrumbs, egg, garlic, ginger, and orange zest to form moist meatballs. These are then air fried to develop a slight crust while maintaining a tender interior. The dish features an orange sauce crafted by simmering fresh orange juice, honey, vinegar, soy sauce, and aromatic spices like ginger and chili flakes, thickened with cornstarch for a glossy coating. This approach delivers a balance of sweet and tangy flavors that heal the savory meatballs well. Cooking with an air fryer avoids deep frying and ensures even cooking without excess oil.
The meatballs can be shaped to uniform size to ensure consistent cooking, and the sauce's orange zest added last preserves its fragrant citrus aroma. The sauce's thickened texture clings well to the meatballs, enhancing each bite. This meal suits serving alongside steamed rice or vegetables to balance the citrus and savory components.
Practical tips include gently mixing the meatball ingredients to avoid dense texture, using whole wheat panko breadcrumbs for a healthier version, and avoiding overcrowding in the air fryer to allow proper air circulation. A kitchen thermometer can confirm doneness, aiming for an internal temperature of 155-160°F. Adding finely shredded vegetables like zucchini or spinach to the meat mixture can add moisture and nutrition without altering flavor significantly.
Ingredients
For the Chicken Meatballs
- 1 pound ground chicken
- ½ cup panko breadcrumbs
- 1 egg
- 1 garlic clove, minced
- ½ teaspoon ginger grated
- 1 teaspoon salt
- ½ teaspoon black pepper ground
- 1 teaspoon orange zest
- cooking oil spray
For the Orange Sauce
- 3 medium orange plus water to equal 1 cup of liquid, zested and juiced
- ¼ cup honey or sugar
- 1 tablespoon rice vinegar or white vinegar
- 2 tablespoons soy sauce
- ½ teaspoon ginger grated
- ¼ teaspoon salt
- ¼ teaspoon black pepper ground
- 1 tablespoon cornstarch (plus 2 tablespoons water)
- red chili flakes optional, pinch
- 1 teaspoon orange zest
Instructions
- Preheat the air fryer to 375°F. Gather and prepare the ingredients by zesting and juicing 3 oranges, mincing the garlic, and grating the ginger.
- Make the orange sauce. In a saucepan or small pot, add 1 cup of orange juice plus water, honey (or sugar), vinegar, soy sauce, ginger, salt, ground pepper, and red chili flakes. Heat for 3 minutes.
- Thicken the sauce. In a small bowl, whisk 1 tablespoon of cornstarch with 2 tablespoons of water to form a paste. Add to the orange sauce and whisk together. Continue to cook for 5 minutes, until the mixture begins to thicken. Once the sauce is thickened, remove from the heat and add orange zest.
- Season the ground chicken. In a large mixing bowl, mix together ground chicken, panko breadcrumbs, egg, garlic, ginger, salt, ground pepper, and orange zest. Mix until well incorporated but don't overmix or the chicken will become dense.
- Form the meatballs. Using a medium cookie scoop or a spoon, scoop and roll the mixture into 2-tablespoon balls and place them on the prepared baking sheet/air fryer tray. (I recommend greasing your hands with a bit of olive oil to prevent the mixture from sticking.)
- Air fry. Spray cooking oil on top of the meatballs. Air fry for about 12 minutes or until the meatballs are browned and cooked through (internal temperature 155-160°F). [Chicken tends to dry out pretty quickly so keep a close eye on it. The meatballs will continue to cook off the heat.]
- Serve. Toss the chicken meatballs with the sauce. Serve immediately and enjoy!
Notes
- Use whole wheat panko breadcrumbs for a healthier option without sacrificing texture.
- Mix the meatball ingredients gently by hand to keep the meat tender and avoid dense meatballs.
- Shape meatballs uniformly using a cookie scoop or lightly oiled hands to ensure even cooking.
- Do not overcrowd the air fryer basket to allow proper air circulation for crispiness.
- Use a kitchen thermometer to check the meatballs reach 155-160°F internally for safe doneness.
- Add shredded vegetables like zucchini, spinach, or carrots to increase moisture and subtly boost nutrition.
- Use orange juice or a combination of orange juice and water to make up the 1 cup of liquid needed for the sauce.
