Description

Ingredients
- 2-3 chicken breasts butterflied and cut in half to make 4-6 thin cutlets

- 6 provolone cheese or mozzarella cheese, or 1/2 cup shredded mozzarella cheese
- 1/2 cup marinara sauce plus extra for serving

Instructions
- Mix together the panko breadcrumbs, Parmesan cheese, oregano, basil, and garlic powder until well combined and transfer to a shallow plate.
- Whisk the eggs in a shallow dish or pie plate.
- Season the chicken breasts on both sides with salt and pepper.
- Preheat air fryer to 375F (190 C). Dip the chicken in the eggs, then dip in the breadcrumbs, coating thoroughly on both sides. Place in a single layer in air fryer basket (you may have to cook in batches)
- Cook for 6 minutes in the air fryer then flip the breasts over, top each with a spoonful of marinara sauce and sliced cheese, then cook for another 3-4 minutes until chicken is cooked through and cheese is melted.
