Ingredients
- 500 g (1lb) chicken breast
- 1 cup flour
- 2 egg beaten
- 2 cups panko breadcrumbs
- 1 tsp salt
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp oregano dried
- 1 tsp black pepper
For the Jalapeño Ranch
- ½ cup sour cream
- ½ cup mayonnaise
- 1 tbsp jalapeños chopped
- 2 tsp dill finely chopped
- 1 tsp parsley finely chopped
- 2 tsp chives finely chopped
- 1-2 tsp lime juice
- salt to taste
- black pepper to taste
Instructions
- Slice the chicken into bite size chunks.
- Place the flour, eggs and panko breadcrumbs in separate shallow bowls. Season the flour with salt and pepper. Season the breadcrumbs with the spices.
- Coat the chicken in the flour, then in the beaten egg and finally in the breadcrumbs mixture. For a thicker coating, repeat the egg and breadcrumb steps.
- Place the chicken pieces in a single layer in the basket of an air fryer then drizzle or spray with olive oil.
- Cook the chicken at 200ºC/390ºF for 15 minutes, turning half way through.
- Finely chop the herbs and place in a bowl. Mix in the mayonnaise, sour cream, lime juice, jalapeños, salt and pepper. Taste and adjust seasoning if necessary.
- Remove the popcorn chicken from the air fryer then serve with the ranch and lime wedges.
