Air Fryer Pork Loin

This Air Fryer Pork Loin recipe uses a mustard and rosemary rub, followed by a honey glaze to create a roast with a flavorful crust and tender interior. The high heat and air circulation cook the pork evenly while the honey caramelizes for a balanced sweet-savory finish. It provides a straightforward method for roasting pork loin at home with an air fryer.

Description

The Pork Loin is prepared by patting dry a 3 to 5-pound roast, then spreading mustard over the fat cap. Rosemary and salt are sprinkled on top, creating an herbaceous, savory crust. Roasting occurs in the air fryer at 370°F for about 45 minutes, with flipping halfway to ensure even cooking. An instant-read thermometer is used to check doneness, aiming for an internal temperature of 145°F to ensure safe consumption while keeping the pork juicy.

After reaching the correct temperature, the pork is coated with honey and cooked briefly at a lower temperature of 300°F to let the honey caramelize on the surface. This step adds a sweet glaze that complements the mustard and rosemary flavors, giving the pork a balanced sweet-savory taste and appealing appearance.

The method adjusts for different air fryer sizes by trimming the roast if needed. This roast can be a simple weekday meal or part of a dinner centerpiece served with sides. The combination of mustard, rosemary, salt, and honey allows for straightforward seasoning with complementary flavors.

Ingredients

Servings
  • 3-5 pound pork loin roast
  • 2 tablespoons mustard
  • 2 teaspoons rosemary
  • 1 teaspoon salt
  • 2 tablespoons honey

Instructions

  1. Make sure your pork loin roast fits in your air fryer basket. You can trim the end off the roast if it is just a little bit too big.
  2. Take the roast out of its package and pat it dry. Then smear the mustard all over the top, which has a fat cap.
  3. Sprinkle the rosemary and salt on top of the mustard.
  4. Put the meat in the air fryer at 370 degrees F for 45 minutes. After 25 minutes take out the air fryer basket and flip the meat.
  5. After 45 minutes check the pork with an instant-read thermometer and make sure it has reached 145 degrees F in the middle. If it hasn't put it back in for another 5-10 minutes and recheck it. Cooking times vary for different air fryers, so always check the internal temperature, don't guess.
  6. Once the pork reaches 145 degrees F use a pastry brush or spoon to coat the top with honey. Then put the basket back in the air fryer and cook it at 300 F for 2 minutes. This lets the honey caramelize on the meat so it has a honey mustard flavor.
  7. Once the pork is done put it on a serving platter and let the meat rest for at least 5 minutes before slicing.

Notes

  • If the pork loin is too large for your air fryer, trim the ends so it fits comfortably in the basket.
  • Mustard can be omitted; alternatively, use pork seasoning, Italian seasoning, or a simple salt, garlic powder, and onion powder blend.
  • Always verify doneness with an instant-read thermometer rather than relying on time alone, as air fryer models vary.
