Air Fryer Pork Satay With Peanut Sauce

Ingredients

  • 2 cloves garlic crushed
  • 2 cm ginger root minced, fresh
  • 2 tsp hot pepper sauce
  • 2-3 tbsp tamari soy sauce or regular if not gluten-free
  • 2 tbsp vegetable oil
  • 14 oz pork chops cut in 3 cm cubes, lean, 400g
  • 1 shallot finely chopped
  • 1 teaspoon ground coriander
  • 0.8 cup coconut milk light, 200 ml
  • 3.5 oz peanut butter unsalted, 100g

Instructions

  1. Mix together the garlic, ginger, 1 tsp hot pepper sauce, 1 tbsp soy sauce, and 1 tbsp oil and meat in a large bowl and leave to marinate for 15 mins.
  2. Preheat the AirFryer to 400F / 200°C.
  3. Put the marinated meat in the basket and slide it into the AirFryer. Set the timer to 12 mins and roast the meat until brown and done. Turn once while roasting.
  4. In the meantime, make the peanut sauce: heat 1 tablespoon oil in a saucepan and gently sauté the shallot with the remainder of the garlic. Stir in the coriander and fry for a few secs.
  5. Mix in the coconut milk, peanut butter, 1 tsp hot pepper sauce and 1 tbsp soy sauce, bring to a gentle boil and boil for 5 minutes, while stirring. If necessary, add a little bit of water if the sauce gets too thick. Season to taste with soy sauce and hot pepper sauce.
  6. Serve the pork satay with some rice or bread and the peanut sauce.
