This recipe calls for Porterhouse steaks brought to room temperature before cooking to promote even doneness.   • 2 (32 oz) Porterhouse steak
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 oz butter

Instructions

  1. Get out and measure your ingredients.
  2. Allow the steak to come to room temperature before cooking. For this cut, this took about 45 minutes
  3. Preheat air fryer at 400ºF for 10 minutes so the basket is extra hot and will lightly sear the steak when it's put on. This will give it a little bit more color and the sear will hold the butter and juice inside making it more tender.
  4. Coat both sides of steak with half of salt and pepper.
  5. Press in.
  6. Place steak in a greased air fryer basket. (Depending on the size of your air fryer, you may have to cook each steak separately.)
  7. Slice 2 tablespoon of butter and place it on top of steak.
  8. Cook steak for 5 minutes per side, then check the temp. It should cook it to 120* but the size and thickness of the steak will affect cooking time so best to go by the temperature after 10 minutes.
  9. Allow meat to rest on wood cutting board for 5 to 10 minutes prior to serving. Add another tablespoon of butter while steak rests.

For Rare

  1. if the internal temp shows 120* Close the air fryer and allow the steak to rest inside as it is still warm for 5 minutes. After 5 minutes, check to be sure the internal temp has reached between 125-127*.

Medium Rare

  1. temp is between 130-135* Anticipate the steak rising another 5* as it rests when considering cooking time. Add 1-2 additional minutes for medium. Don't cook it past medium.
  2. Slice and serve. Enjoy every bite.
