Air Fryer Pot Roast

Tender beef roast cooked to you desired doneness in the air fryer.

Ingredients

  • 2 tablespoons olive oil divided
  • ½ cup red wine divided, 125ml
  • ½ cup beef stock divided, 125ml
  • 1 teaspoon rosemary fresh
  • 1 teaspoon parsley chopped, fresh
  • 2 bay leaf
  • 1 teaspoon garlic minced
  • 2 tablespoons cranberry jelly divided
  • 3 pounds beef roast boneless, round roast
  • 1 ½ cup carrot chopped, 200g
  • 1 ½ cup potato peeled, quartered and halved, 200g
  • 1 red onion quartered, large
  • ¼ teaspoon salt sea salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Preheat the Air Fryer to 350 degrees F / 180 degrees C.
  2. Combine the oil, wine, beef stock, rosemary, parsley, bay leaves, garlic, cranberry jelly, salt and pepper in a small bowl.
  3. In a bowl or ziplock bag combine the beef roast and half of the marinade. Marinade at room temperature for 30 minutes.
  4. Select a baking dish or cake tin that will fit inside your air fryer and add the vegetables along with the remaining half of the marinade. Place in the air fryer to roast for 30 minutes.
  5. Remove the air fryer basket and add the beef on top of the vegetables. Roast until the meat reaches your desired level of doneness.
  6. Garnish vegetables and beef with parsley. Serve with the cooking juices.

  • Opt for a well-marbled, boneless roast beef like round roast, chuck roast, or brisket. These cuts are more forgiving and become tender and flavorful when slow-cooked. Allow the roast beef to come to room temperature before cooking. This helps it cook more evenly and reduces the risk of overcooking the outer layers.
