Air Fryer Potato Skins

Description

To prepare Air Fryer Potato Skins, you start with fully cooled cooked potatoes so the skins maintain structure and cook evenly without burning. Halved and carefully scooped out, the skins are rubbed inside and out with oil and seasoning. They air fry cut side up at 400°F for about 5 minutes until edges crisp nicely.

Once crisp, they are filled with shredded cheddar and returned to the air fryer to melt the cheese thoroughly. This two-step air frying creates a potato shell that is both crisp on the outside and tender inside, with a rich melted cheese topping. Serving with sour cream and chopped green onions adds creaminess and freshness.

Handling the hot skins with tongs is advised as they become very warm, and spacing the skins in a single layer in the basket ensures even cooking. Cooking in batches may be necessary depending on basket size.

  • 4 potato cooled, large, cooked
  • 1 tablespoon olive oil

  • ¼ teaspoon black pepper
  • ½ cup cheddar cheese 50 grams, grated

Instructions

  1. Slice the cooked potatoes in half horizontally. Scoop out the insides (save the cooked potato for another recipe), leaving about a ¼-inch border of potato around the skins.
  2. Brush or rub the insides and outsides of the potato skins with the oil, then sprinkle with the salt and pepper.
  3. Place them into the air fryer basket, cut side up. Air Fry them at 400 degrees F (200 degrees C) for 5 minutes until the edges start to get crispy. You may need to cook them in batches.
  4. Fill the potato skins with the cheese and air fry for a further 5-7 minutes or until the cheese is melted.
  5. Serve topped with the sour cream and green onions.

  • Fully cool the cooked potatoes before preparing to ensure proper crisping and avoid burning.
  • Use tongs to transfer potato skins in and out of the air fryer to prevent burns.
