Description

The recipe begins by washing and drying potatoes and coating them with olive oil seasoned with salt and pepper. They are air fried at 400°F until a thin knife indicates doneness, taking around 35 minutes. While baking, cheese is shredded and precooked bacon is sliced into bits, along with scallions prepared for garnish.

Once cooked and cooled slightly, the potatoes are halved horizontally and partially scooped out to keep some potato flesh intact. The cut sides are brushed with remaining oil, then filled with the cheese and bacon. The potato skins return to the air fryer at 400°F for about 5 minutes, melting the cheese and browning the tops. Garnishing with scallions adds color and fresh bite.

  • 4 potato eg. Russet, baking variety
  • 3 tbsp olive oil
  • 4 oz cheese mix and match any meltable cheese.
  • 4 lices Bacon eg. Oscar Meyer all natural pre cooked bacon, precooked
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 scallion

Instructions

  1. Add salt and pepper into a bowl and add olive oil.
  2. Wash the potatoes, pat them dry, then use your hands to cover each potato in the seasoned oil.
  3. Place the potatoes in the air fryer basket and then place the basket into the air fryer at 400 degrees F. for about 35 mins. Check doneness with a thin knife. Air fry for longer if needed, especially if the potatoes are big.
  4. While the potatoes are air frying, prepare the other ingredients. Shred any cheese that is not already shredded. Slice pre cooked bacon into strips. Wash and slice scallions.
  5. When the potatoes are cooked, leave them to cool a little, (easier to work with.) Slice them horizontally and scoop out some of the center. Leave some of the potato to enjoy. Brush with the remaining olive oil used to coat them.
  6. Fill them with cheese, and top with bacon bits. Return them to the air fryer, 400 degrees F. for 5 mins or until golden brown. Sprinkle with sliced scallions and serve immediately.
