Air Fryer Potato Wedges

Air Fryer Potato Wedges are seasoned, hand-cut russet potato pieces cooked until crispy outside and tender inside using an air fryer. The seasoning includes garlic powder, paprika, salt, pepper, and Parmesan cheese for a savory, slightly smoky flavor. The wedges are soaked prior to cooking to improve texture and crispness.

Description

This recipe starts with unpeeled russet potatoes cut into evenly sized wedges and soaked in boiling water to remove excess starch and achieve a crisper texture. After draining and drying, the potatoes are tossed with olive oil and a blend of garlic powder, paprika, salt, and freshly ground black pepper.

They are then air fried at 400°F in a single layer, sprinkled with Parmesan cheese prior to cooking, which adds a savory depth and a bit of crust. The wedges require shaking or tossing during cooking to ensure even crisping and browning.

The result is a batch of wedges with a tender center and a crisp, seasoned exterior. They can be served as a side dish or snack and paired with dips or sauces of choice.

The recipe notes that the wedges can be frozen in an airtight bag for up to three months and reheated in the air fryer at 400°F to restore crispness. Alternatively, they can be baked in the oven at 400°F for around 40 minutes, shaken periodically for even cooking.

Ingredients

Servings
  • 2 russet potato unpeeled, scrubbed and rinsed (about 2 - 2 1/2 lbs), then cut into wedges
  • 2 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 cup Parmesan Cheese divided, plus more for serving, finely shredded

Instructions

  1. Preheat air fryer to 400 degrees.
  2. Scrub and rinse potatoes, then thoroughly pat dry. Cut each potato in half then cut each half into 4-6 wedges, evenly sized. Place potatoes in a bowl and cover with boiling water. Allow to soak for 10-30 minutes.
  3. Drain potatoes and pat dry with paper towels.
  4. Whisk together olive oil, garlic powder, paprika, salt and pepper. Drizzle over potatoes and toss to combine. Spray air fryer basket with cooking spray and add enough potatoes that you can spread them apart without touching (you may need to cook them in batches). Sprinkle with parmesan cheese.
  5. Cook for 10-15 minutes, opening the basket every 5 minutes to give them a shake/toss, until tender and crispy.
