Air Fryer Pumpkin Pies

This recipe creates small pumpkin pies made with refrigerated pie crust and pumpkin pie filling, cooked in an air fryer for a crispy crust with a soft pumpkin center. The crust circles are filled, sealed, brushed with an egg wash, then sprinkled with cinnamon sugar for added flavor and texture. Cooking them in batches in the air fryer allows for even browning and a flaky, golden pastry outside with a warm, spiced pumpkin filling inside.

Description

Air Fryer Pumpkin Pies are small hand pies made by cutting circles from refrigerated pie crust and filling them with pumpkin pie filling. The edges are sealed carefully to hold the filling, and the pies are brushed with an egg wash that helps create a glossy, golden surface. Sprinkling cinnamon mixed with sugar on top adds a classic warm spice note. Cooking these in an air fryer at 360°F gives the pies a crisp exterior while keeping the pumpkin filling tender and flavorful inside. Making small, individual pies is convenient for serving as snacks or dessert without needing a full pie to slice.

The method involves preparing the pies in a half-moon shape with fork-crimped edges, making small vent slits on top, and arranging the pies spaced apart in the air fryer basket to ensure even heat circulation. The result is a flaky crust with a moist, smooth pumpkin filling seasoned lightly with cinnamon sugar.

These mini pies work well for small gatherings or quick treats. Since they are made in the air fryer, the cooking time is reduced compared to a traditional oven. They can be enjoyed warm or at room temperature.

Ingredients

Servings
  • 2 pie crust refrigerator
  • 1 1/2 cup pumpkin pie filling
  • 1 egg large
  • 1 tablespoon water
  • 2 tablespoons granulated sugar white
  • 1 teaspoon cinnamon optional
  • olive oil spray

Instructions

  1. First, if the pie crusts are frozen, thaw them per the directions on the package.
  2. Roll out the pie dough on a lightly floured surface and using a cookie cutter cut out 4 4-inch circles from each crust. Discard the scraps or roll them to make more hand pies. Or make smaller pies.
  3. Add 2 tablespoons of pumpkin pie filling to the circles leaving about a ½-inch border.
  4. Next, dip a fingertip into some water and run it around the edges of the circles.
  5. Fold the crust over the filling to create a half-moon shape and gently pinch the edges together. Using a fork crimp the edges together.
  6. In a small bowl, whisk the egg with the water and brush the mixture all over the pies.
  7. Mix the cinnamon with the sugar and sprinkle on top of the pies.
  8. Make 3 small incision cuts on the top.
  9. Preheat the air fryer to 360 degrees F.
  10. Spray the basket with oil spray. Arrange the pies, in one single layer not touching each other, you may need to cook these in batches.
  11. Air fry for 9-10 minutes, or until golden brown.
