Air Fryer Pumpkin Seeds

These air fryer pumpkin seeds are seasoned with ghee, garlic powder, salt, and black pepper, offering a crisp, roasted snack. Cleaning and drying the seeds thoroughly is essential before coating them evenly with melted ghee and seasonings. The seeds roast evenly in the air fryer at 360°F, shaken halfway through to ensure golden crispness, making them a straightforward way to transform raw pumpkin seeds into a crunchy treat.

Description

Air Fryer Pumpkin Seeds begin by thoroughly cleaning the raw seeds, separating them from pumpkin pulp and rinsing under water. Optionally boiling the seeds in salted water can aid cleaning, yet is not necessary for flavor. After drying completely—pressing with towels to remove moisture—the seeds are coated with melted ghee (or butter/olive oil), garlic powder, salt, and pepper.

The seeds roast in the air fryer at 360°F for about 10 to 15 minutes, shaken amid cooking to avoid burning and promote even browning. The result is crisp seeds with a mild garlic and buttery note balanced by seasoning. This process yields a crunchy, flavorful snack that contrasts with the softer pumpkin flesh.

Batch roasting is recommended for larger quantities to maintain even crisping. Seasonings can be varied, including chili lime or smoked paprika for additional spice or smokiness according to preference.

Ingredients

Servings
  • 1 cup pumpkin seeds
  • 1 teaspoon ghee you can also use olive oil, or butter
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

Cleaning the pumpkin seeds

  1. Remove all the seeds from the pumpkin. Separate the pulp from the seeds as much as you can.
  2. Then put the seeds in a colander and rinse under running water to separate any remaining pieces of pulp.
  3. Optionally, you can also boil the seeds for 10 minutes in salted water. It will help remove the pulp.
  4. Lay the seeds out on a paper towel or clean kitchen towel to dry for 30 minutes. Press with paper towels to remove any extra water.

Roasting the seeds

  1. Before you get started on roasting the pumpkin seeds, make sure that they are completely dry.
  2. Transfer the dried pumpkin seeds to a bowl. Add melted ghee/butter along with garlic powder, salt, and pepper. Mix well till all the seeds are well coated with the seasonings.
  3. Spread the seeds in the fryer basket evenly. Cook at 360F for 10-15 minutes. Shake the basket half way through for even roasting.
  4. After they are done, take out and check whether they are crisp to your liking. If not, air fry them for additional 3-5 minutes.
  5. Let them cool, adjust the seasoning to your taste and enjoy the snack.

Notes

  • Use chili lime seasoning or smoked paprika to add spice and flavor variations.
  • Boiling pumpkin seeds before roasting helps clean but has minimal impact on taste.
  • Roast seeds in batches when preparing larger quantities to ensure even cooking.
