Air Fryer Roast Beef
Description
This roast beef recipe uses a 2.5-pound beef joint seasoned with a mix of coarse salt, black pepper, dried herbs, garlic granules, and either mustard powder or brown sugar. The beef is brushed with olive oil and the seasoning paste pressed onto the surface.
The beef is cooked in a preheated air fryer at high heat to sear and form a crust, then flipped and cooked at a lower temperature to finish. Checking the internal temperature with a meat thermometer helps achieve desired doneness.
The roast beef is versatile for meals and can be served sliced warm or cold. The air fryer method reduces roasting time and creates a crust similar to skillet-seared beef before oven roasting.
The recipe uses a Cosori XXL air fryer, but similar sized appliances can be substituted, ensuring the joint fits comfortably.
Ingredients
Seasoning
- 2 tsp salt coarse
- 1 tsp black pepper freshly ground
- ½ tsp thyme dried
- ½ tsp garlic granules
- ½ tsp rosemary dried
- ½ tsp mustard powder or brown sugar
For the Roast Beef
- 2 ½ lbs beef roasting joint check it fits into your Air fryer, 1.2 kg
- 3 tbsp olive oil
Instructions
- Take your beef joint out of the fridge and pat dry. Leave it to come to room temperature for 30 minutes. Make sure to check whether your joint fits into the air fryer. You can always slice a larger joint in half.
- Meanwhile, preheat the air fryer (400°F /200°C) for 10 minutes. Mix all the seasoning ingredients together and brush the beef all over with olive oil. Press the seasoning mix all over the beef.
- Use a liner in the air fryer basket (optional) and position the beef on top. Roast for 10-15 minutes. Cooking the beef at a high temperature will create a lovely crust on the exterior, sealing all the lovely juices within in the same way that searing the beef in a skillet before roasting in the oven.
- Remove the air fryer basket and turn the beef over. Reduce the temperature to 350°F / 180°C and cook for a further 30 minutes.
- Start checking the internal temperature of the beef with an instant read thermometer inserting the probe in the middle thickest part. Use the table in the recipe notes as a guide to cook it to your liking, adding five minutes of cooking time until your preferred temperature is reached. Remember that the temperature of the joint will continue to rise slightly as it rests so factor that in. I usually aim for medium rare (130-134°F / 55-57°C).
- Once the beef is cooked to your liking place it on a warm platter and cover loosely with foil. Leave it to rest for 20-30 minutes before slicing against the grain and serving with your favorite side dishes.
